First thing that comes to mind for me is a Cracker Jack George Gibson.
Sure wish he was in one (or both) of those sets.

Like has already been mentioned a Ted Williams in the sets he is missing from. Here is a custom 52 Topps Ted Williams made by a fellow member. It is one of the nicest I have seen.
