here's mine, color looks better with old scan and in real person, not sure how to adjust the light settings in the mac scanner software

Not sure of your system/scanner, but try the lid open, lights off (dark room) technique when scanning. I have been doing that as well as only scanning the actual size of the card (cropping) and have been getting pretty good results, imo.
I still have to get better (or wear better glasses!) when cropping in my cards. Some, I have almost eliminated the holder, and others, I am quite a bit off.
