I try to end them on Sunday nights. The perfect night would be when most collectors are home and drinking heavily.

I sell on Ebay, and to be quite honest, with the advent of sniping, there really is no preferred night to end auctions like there used to be in the past before sniping software (back then, Sunday was the preferred night). As long as you don't end items before 5 in the afternoon east coast time, you are fine.

A lot of sellers - including Probstein and folks who list regularly - end their auctions late for us East Coast folks. Why end the auctions at 11:30 pm ET?

As someone else noted, I would prefer to be awake and watching the auctions, especially in case I win a few (or don't) and want to adjust other bids accordingly.

So to all sellers, a 9pm or even 10pm end time ET is still late enough to catch west coast folks, but lets the rest of us on the east coast get to sleep!
