How tough are these sets?

M101-4/101-5 - I know they have a bunch of different backs, but how hard would it be to get the most common George Sisler or Jim Thorpe from these sets?

1917 Collins and McCarthy - How tough is the Hornsby?

1928 Yuengling's Ice Cream?

Also how tough is the Joe Jackson e91 Caramel?
