Collecting One player only

I think it's a great idea! PSA has been encouraging this kind of collecting with their Master Set registry where they have listings of Master Sets for each player and you can achieve a rank, much like ranking on the list of best T206 sets. I'm sure you're aware Matty's got some pretty pricey stuff out there, especially if you're sticking to at least 4s and 5s.
