Actually, Henson now signs that card freely. He's been coaching in the Yankees minor league system (GCL I believe) and I know a couple people who got him to sign it without issue. But yes, at the time it was issued and during his playing days, it was impossible to convince him to sign that one.

I have a signed Nick Adenhart UD I got IP that was signed right after it was released. Three weeks later he was killed.
