All joking aside. I am not aware of any sort of listing of completed sets. You would be able to see a fraction of what is out there by going to the PSA set registry. I say a fraction, because I think only a small fraction of set builders probably participate.
I know of a few people working on vintage sets. The most commonly collected seems to be the 33 Goudey set. Considering some of the heavy bidding that I have seen, I'm sure the number of people I am actually aware of trying to do it is probably much smaller than the number of those who aren't public about it.

There are a few people on this board who are close to completing really, really tough sets.

A couple of guys I used to run with back in the 1970s probably have some close to complete sets but neither would do TTMs so they are probably missing a few who may have signed through the mail post-career but were hard to get or never came to the Bay Area.

The most impressive run I know of is a guy I met at a show in Canada who was working on complete sets of signed hockey cards from 1951 Parkhurst through 1990 OPC. Though I didn't see the collection he showed me his want list and most sets were down to a dozen or less. Granted, until recently hockey players were among the most accommodating athletes of all when it comes to autographs but that kind of run is amazing. He came back to my table later and showed me a signed Orr RC he bought at the show that completed that set for him.

I am sure there are some 1964 topps Giants sets out there. I am missing Clemente to complete it. Also perhaps some 1960 Fleer of everyone who was alive when it came out. I am missing Cobb. I have a complete 2003 Jewish major leaguer set except for Sam Nahen who died shortly after. I don't think anyone has come anywhere near as close as I have, also on the silver addition I am only missing Nahem and Cy Block. many I probably have the only signed ones in existence.

I am about 200 away from the 76 topps set and traded set but that number includes checklists and the Sporting News All Time All Stars of which only Ted Williams can be signed.

I also saw that 2011 auctions with all of those signed sets. Amazing the amount of time and effort. Multiple guys like Munson who died so young and are tough to find.

There is a wonderful football website Tales Form the AFL run by Todd Tobias that has a link to his signed Fleer and Topps 1960s AFL sets.

He also has added some great stories about the trials. tribulations and joys of working on these sets.

Great site!
