The pitcher who has had two Tommy John surgeries but has continued to pitch well that springs to mind is Nathan Eovaldi.
But to your point, shoulders and knees are tougher to come back from than say, elbows and hamstrings. Acuna may never have QUITE 70 steal speed when he comes back, but hopefully his knees don't hold him back from hitting.
