Until 1977, the name Chilean sea bass didn’t exist and few people ate the fish before the 1990s. Prior to that, scientists knew the fish by the less mouth-watering name of "Patagonian Toothfish." In fact, the fish isn't a bass at all, and is very rarely caught off the coast of Chile. The Chilean sea bass is a pure marketing invention. Similarly, since we would never order dead baby calf off a restaurant menu, the term "veal" was created. Gotta love marketing.
