I'm assuming you are referring to the background of the scans? If so, the easy way is to simply place a black piece of construction paper (or similar) on top of the card(s) when you scan it.
The other way; if you have Photoshop; scan the image into (or import into) Photoshop, select the card with the marquee tool (draw a rectangle around the outer edge of the card), then select inverse (which will select the background instead of the card) and then fill with black... |
