Regardless of what PSA might say, I doubt very much that Gehrig signed that document in December 1940, especially as his hands were paralyzed by January 1940, and he would die just six months later.

Looks to me more like a shaky Eleanor Gehrig proxy.

And how can PSA--or anyone else for that matter, possibly authenticate this signature, without anything comparable.
