Rarities with T206 cards can often be best defined by T206 collectors. Some collectors seem to like the Old Mill Cobb, or the SGC 5 Cobb. Some like the Factory 42s or some of the odd printing (from overprints to bolder lines to miscuts). The 1967 Topps Baseball Set is an extremely nice quality. Some of the non-sports pre-war sets are difficult to find complete. Newer collectors like the Bobby Witt autograph numbered to 5 or other low number items. The massive autograph card and index collection has unique signatures - including some pre-rookie signed cards of HOFers like Roy Halladay that I've never seen before. The Reggie White 1986 signed NFL rookies are very rare.
