Very nice photo. In the past year I sold some older Union College photographs, and while they were not as old as yours, all of the sweaters and uniforms only sported a U.
Maybe I am stating the obvious here, but it looks like the one gentleman in the back row is sporting a uniform with what looks like 91 (for the year 1891) on the chest. It could also say 01, but maybe it is easier to make it out on the original

Could be University of Colorado at Denver. Not sure when that campus was founded, but it's worth looking into since they do go by those UCD initials.
