First off, there's a list of college mascots at Wikipedia: http://en.wikipedia.org/wiki/List_of_colleges_by_mascot. And no, there aren't any Rabbits or Bunnies--but there are the Battlin' Beavers, the Claim Jumpers, and the Dirtbags.

Then, here's the updated version of my alma mater's mascot, the Green Terror. When I was there, it looked more like a pea soup-green wookie.
