In my area FedEx will not leave a signature required package without a signature. Be careful though. If you have ever given them permission to leave a box without a signature and you have not recinded that permission in writing they will assume that it is still in effect. My FedEx guy, as is my UPS guy, is prompt, efficient and courteous.
There is one big difference in my area between UPS and FedEx. If you ever have questions about a shipment I've found the UPS support people to be useless. FedEx has been the exact opposite--really on top of things. When UPS tells me they will check on something and call back within an hour they rarely if ever do. FedEx, from my experience, underpromises and over delivers.
